Frugal Foodie: Meatloaf with carrots and mashed potatoes
This is the tenth installment of “Frugal Foodie,” a series where Mackenzie Webb explores recipes that are both appetizing and affordable for college students.
Now that the weather is getting colder and it gets dark at 3:30 p.m., it’s time for those hearty winter-time comfort foods like meatloaf and mashed potatoes.
Ingredients:
2 pounds of ground beef
1 cup of breadcrumbs
2 eggs
½ onion
½ cup of ketchup
1 package baby carrots
4 potatoes
2 tbsp butter
½ cup milk

Step 1: Preheat the oven to 350 degrees. In a large bowl, combine the meat, breadcrumbs, eggs and minced onion. When thoroughly mixed, transfer the meatloaf mix into a baking dish and shape it into a loaf with your hands. Cover the top with ketchup and put it in the oven to bake for 1 hour.
Step 2: While the meatloaf is in the oven, boil the potatoes and drain when tender. Then mash the potatoes with butter, milk, salt and pepper. Bring another pot of water to boil and add the carrots. Cook for around 10 minutes or, until they are tender when you poke them with a fork.
Step 3: When the meatloaf is finished cooking, let it cool for around 10 minutes before cutting.
